Easy Protein Oat Bars w/ Adaptogens

So warm and delicious in cold weather

I’ve been struggling to find sanity in my mornings and my friend, Alyson, had posted a photo of oat bars she had made and I thought “wow, how have I not thought to do this?!” I immediately went to go make some. The thing about me is that I don’t often work from recipes but baking is a lot more precise so I looked up a simple recipe for ratios and used nothing else and I even modified the ratios a bit so I won’t post the link here.

To note, I also wanted to add an extra boost into these so I made these adaptogenic protein bars and used Four Sigmatic’s Adaptogen Blend Mix. And without too many more words (because I like to read things straight to the point when my kids are around) the recipe is below.

Ingredients

1 3/4 cups milk of choice

2 large eggs

1/2 cup pure maple syrup

1/8 cup coconut oil

1/8 cup butter (melted and cooled)

1/4 mashed banana (adds a nice sweet flavor and helps oats bind)

3 cups organic whole oats

1 teaspoon baking powder

1 teaspoon ground cinnamon

1 teaspoon ground cardamom

1/2 teaspoon ground clove

1 teaspoon pure vanilla extract

1/4 teaspoon salt

2 scoops Four Sigmatic Adaptogen Blend Mix

+Hemp seeds, chia seeds, coconut chips, pepitas to liking (no real ratios here.)

Instructions

Preheat oven to 350 degrees and spray or coat 9x9 inch baking pan with non-stick spray or (you can take a cloth and rub soft butter over it if you’ve ditched spray).

Whisk all ingredients together in a large bowl and pour into pan. Top with a few more pepitas and coconut chips.

Bake in oven for 35 minutes.

Cool for 5 minutes before serving.

It’s literally that easy and this recipe is so versatile. Add other ingredients or modify these. Add fruit if you’d like. You really can’t mess this up!
